Four pits can be used. On the day that I am there they are using two. Look at all that fresh cut wood. That is a key to successful BBQ

The down side of these ribs is they were cooked to fast. They were tough and needed a few more hours. In the rush to make money slow cooking is sacrificed. Sad. Great potential.
I went and gook by the smoke so it would infuse my clothes. It is a guy thing.
